Nothing fancy for dinner tonight folks! We’re just eating tacos, and they’re super easy to make! I simply made a few substitutions to make them extra healthy!
- Instead of meat, I used black beans (no cholesterol or saturated fat)
- Instead of lettuce, I used spinach (much higher in vitamins A & C)
- Instead of cheese, I used shredded carrots (no cholesterol or saturated fat & super high in vitamin A)
Served with black rice, sweet white corn and avocado… with roasted organic zucchini (so juicy!) and sweet red bell peppers. Nothing complicated, just simple and scrumptious! Good for your health, the environment and the animals too. A win-win for all!
