I fried up a few tortillas, took them out of the pan & threw on some chopped lettuce, red onions and avocado and set aside.
Then I sautéed 1/3rd of a package of Trader Joe’s Beefless Ground Beef in a little bit of olive oil with 2 cloves of chopped fresh garlic. When it was lightly browned, I spooned it over the tostadas.
Then I heated up some black beans and layered those on top, followed by some grated vegan cheese (Daiya, Follow Your Heart, Trader Joe’s or Go Veggie work great!). If you don’t have access to vegan cheese, or want to skip it, julienned carrots would work well to add a lovely bright orange color!
Then for the final touch, I topped the whole yummy pile of vegan goodness off with a big dollop of yummy peach~mango salsa! The perfect blend of sweet & spicy!
