Jackie’s Vegan Tostadas! Easy, yummy & oh SO pretty!


While everyone else seemed to be BBQ~ing over the holiday weekend, I was in the mood for Vegan Tostadas! It’s another yummy meal that you really don’t need the recipe for, but here’s how I made mine!

I fried up a few tortillas, took them out of the pan & threw on some chopped lettuce, red onions and avocado and set aside.

Then I sautéed 1/3rd of a package of Trader Joe’s Beefless Ground Beef in a little bit of olive oil with 2 cloves of chopped fresh garlic. When it was lightly browned, I spooned it over the tostadas.

Then I heated up some black beans and layered those on top, followed by some grated vegan cheese (Daiya, Follow Your Heart, Trader Joe’s or Go Veggie work great!). If you don’t have access to vegan cheese, or want to skip it, julienned carrots would work well to add a lovely bright orange color!

Then for the final touch, I topped the whole yummy pile of vegan goodness off with a big dollop of yummy peach~mango salsa! The perfect blend of sweet & spicy!

Lots of protein, beautiful presentation and most importantly, delicious & cruelty~free!

    These were delishious! Thanks!
    But a question…are the corn tortillias supposed to get crunchy or stay soft and bendable? And how do you eat them? Just pick up and eat or fork and knife?!
    Mine were still soft and ate one sort of folded and one with a fork and knife. Just wasnt sure how they were “supposed” to be!

    Hi Stacey! I ate these with a fork and knife because I put sooo many things on top of them! But usually I like my tortillas to be mostly soft – just a little crispy – and I fold them & eat them by hand. It really just depends on your preference. Glad to hear you liked them!
