Jackie’s Hearty Vegan Veggie Lentil Wild Rice Soup

Here’s a another super simple “no~recipe” vegan soup that I whipped up for dinner tonight! As I’ve said many times before, I have lots of beautiful cookbooks, but I rarely use them. I’m more of a “throw whatever sounds good together and test as I go” kind of cook!

So here’s what I put in my really delicious soup today!

First I filled up a big pot with water, leaving space at the top to allow for all of the vibrant veggies, grains, legumes and even a fruit I that planned on adding! Spoiler Alert: Ok, ok, – nothing fancy like my last soup with apples in it! This time the fruit is just a tomato, but still! it’s a fruit!

Then I brought the water to a boil and added organic brown rice, wild rice, red lentils, green lentils, chopped carrots, onions and bell peppers and let them simmer for a while…


Once everything looked pretty well cooked, I added some chopped organic kale & tomatoes to the pot. I added these last because they don’t need much time to cook and I wanted them to remain vibrant.

For seasoning I added a little bit of nutritional yeast (I buy it in bulk at Whole Foods Market), sea salt, pepper, sage, oregano, garlic and curry. You can adjust the thickness of your soup by the amount of nutritional yeast you add. The more you add, the creamier it becomes. The one I buy has B12 in it too, which is an added bonus!

And that’s the scoop! Serve with some nice vegan bread (I bought a good one at Trader Joes!) and you’ve got yourself a super easy, healthy, cruelty~free and very delicious vegan meal!
