Hampton Creek just announced that the protein in their highly anticipated “Just Scramble” vegan eggs has been given the thumbs up by the FDA, clearing the way for its debut!
According to Hampton Creek Communications Director Andrew Noyes,
“Hampton Creek has just been notified by the FDA that our submission for mung bean protein isolate nicknamed ‘Jack’ has been met with a ‘No Questions’ letter from the agency, meaning there are no concerns around safety and it is ‘Generally Regarded as Safe’ (GRAS)”
Just Scramble will contain 20% more protein than chicken eggs (for those who still worry about protein lol), and since it’s made 100% from plants, it will be cholesterol-free, too!
With minimal research, I was able to track down the official letter to the FDA and noticed Hampton Creek has a lot more in store for mung beans, far beyond vegan scrambled eggs!
Additional uses include everything from cereals and pudding, to cheese and yogurt! All made with little mung beans!
In the meantime, if you’d like to enjoy a vegan scramble, consider sautéing your favorite veggies (i.e. mushrooms, onions, etc.) and then crumbling in some tofu.
Just add a bit of turmeric for a beautiful yellow hue (it’s healthy, too!). And as I mention in my new book, The Vegan Way, I also love to add a few generous dashes of nutritional yeast for that scrumptious umami flavor!
Even Trader Joe’s now carries nutritional yeast (yep, it’s true!) A dash of Braggs Aminos can be a tasty addition, too.
It sure is easy to be vegan! But heck! Earth to Hampton Creek!! Hellooooo!! The world is more than ready for those vegan eggs!
