Craving a dozen or so delicious autumn weather treats, but short on time and money? Just pick up a pack of Trader Joe’s Pumpkin Bread & Muffin Mix. It’s vegan!
And here’s the trick! Although the box says add eggs, I replace the eggs with 3/4th of a very ripe banana. Just smush it up in the 1/2 cup of oil and pour it in with the other ingredients (and I’m pretty sure those of you who are avoiding oil, could figure out a substitute… maybe water or almond milk?).
It’s SO easy! The only other ingredient you need to add is water. Piece of cake. I mean easy as pie! Quick as a muffin??
Replacing the eggs with bananas makes it a lot easier on the tortured chickens of the world. Most know that chickens are debeaked & horrifically cramped in their cages, but did you ever think about what happens to the baby male chicks, who obviously don’t lay eggs?
Millions of male baby chicks are discarded into garbage bags where most suffocate on top of each other and then they’re tossed into a grinder to make animal feed. I’ll stick with bananas, thanks!
As an added bonus, using bananas in lieu of eggs helps you avoid chowing down on salmonella bacteria. In light of the recent and largest salmonella outbreak in U.S. history, it’s good to know there are safe, cruelty free alternatives to eggs! I hear applesauce works well too! Some people even use vinegar. There are all sorts of healthy, cruelty~free options!
I made a second batch tonight, and made sure to snap a pic fast! You can jazz them up a bit with blueberries or a dollop of jam on top just before you pop them in the oven. I put a fresh raspberry on top of each one just for fun.
As of this week, the mix costs $2.99 a box at Trader Joe’s. I think it’s well worth it! Here’s to compassion, wellness, and yummy festive muffins!
