Quick & Easy, Cheap & Yummy, Last Minute Vegan Valentine’s Day Red Velvet Cupcakes

I have a lot of “MVJ” fans who only eat healthy foods. This post isn’t for you. It’s the antithesis of a kale smoothie, or my vibrant sunshine salad.

It’s for the last minute procrastinator who wants to have a little vegan something to take to the office for Valentine’s day, or a basket of quick & yummy goodies to give to their true love, or best friend in a snap! Or for the vegan who doesn’t have $125 per person to shell out for a fancy valentine’s day dinner. Yep, that’s how much it costs at Madeline Bistro this year for the Chef’s Tasting Menu. If you’ve got money to spare, it sounds pretty awesome!

So here’s the scoop: Duncan Hines Red Velvet Cake Mix is, vegan. Shocking but true. You can whip up some pretty yummy cupcakes with it & top them with vanilla or classic vanilla Duncan Hines Creamy Home-Style Frosting. Yep, it’s vegan too. Healthy? No. Easy & Vegan? YES! Trader Joe’s has a simple vegan frosting mix too, if you prefer! And you can buy super pretty decorative paper cupcake holders too, to make them extra festive. I bought the golden ones in the picture at Michael’s. With a coupon, I think I got them for about 1 buck.

I’m not cooking with Duncan Hines mixes anymore because I gave them up as part of my New Year’s Resolution. But for those who are in transition to becoming vegan, they might just help you over the hurdle a bit. I made the batch in the picture just before Christmas, and topped them off with fresh raspberries. I used Ener-G Egg Replacer in lieu of stolen chicken eggs, but I’ve also used smushed bananas too. They were all gobbled up within a couple of hours, by non~vegan relatives, who commented “WOW! You should really open a cupcake shop! These would sell REALLY well!” lol.

Other suggestions for last minute vegan treats include a box of Valentine’s Day cupcakes from Sweet Avenue Bakery! Or Sticky Fingers Vegan Heart Cakes. So cute! Unfortunately, I don’t live near those bakeries, so I think I may take advantage of the Valentine’s Day Special at Native Foods! For $9.95, it’s pretty hard to pass up.
