I made a Vegan Seitan Roast from scratch for the very 1st time & it was SUPER scrumptious!

Oh my gosh! Let me tell ya! I’m not much of a recipe person. I cook fast, and throw in whatever sounds good, and thankfully, my meals usually turn out really well! I can probably count the number times I’ve followed a recipe on two hands. Making seitan from scratch?! Never even crossed my mind! Until I saw a super enticing recipe from cookbook author, Isa Chandra Moskowitz, called Seitan Roast stuffed with Shitakes and Leeks!

We usually go to relatives’ homes for Thanksgiving, but this year we decided to stay put, skip the rush rush hurry hurry and relax. For the first time I was able to have the entire Thanksgiving day in my own kitchen to experiment with cooking and it was SO much fun!

At first I doubted myself, and I actually bought a Field Roast Vegan Hazelnut Cranberry Roast En Croute as a back up plan, just in case I got weak knees or my feast turned out disastrously! But in the midst of all of my cooking, my husband asked if we should take the frozen “back~up” roast out of the freezer, and I said “No! I’m really going to do this and it’s going to be great!” And great it was!

Seriously, if you’re in the mood for some fun cooking and creating a hearty centerpiece meal that’s super tasty, try making this Seitan Roast stuffed with Shitakes and Leeks! It took Isa 20 years to get this recipe down to a tee! And now we can all reap the yummy rewards!
