I love easy vegan stuffing and here’s how you make it!

Seriously, what are people thinking?! Even if you don’t give a hoot about the welfare of animals, and the horrors of factory farming, you’d think you wouldn’t want to jam your food up a dead bird’s anus. People sure are strange.

On a lighter note, my vegan stuffing came out great! I was racing around trying to fix it super quickly so that I wouldn’t miss the ABC Evening News story about Mercy for Animal’s undercover investigation of McDonald’s egg supplier. If anyone missed it, there will be a 20/20 story on it tonight! I chopped up onions, mushrooms, celery and a handful of cranberries and sautéed them in a bit of Earth Balance “butter.” If you have trouble finding Earth Balance, Smart Balance Original Light, with flax, is also vegan!

Then I just added 1 cup of organic vegetable broth that I bought at Whole Foods Market and 2 cups of Pepperidge Farm’s Herbed Seasoned Stuffing that I picked up at Target. (btw, a special shout out to Target, who voluntarily pulled all of the eggs supplied by Sparboe upon hearing today’s MFA report! They won’t be carrying them anymore! Thank you Target!!)

Then I stirred everything up for a bit, dished it out, and raced to the TV to watch the news! It’s SO easy to make vegan stuffing! Next up, Vegan Stuffing from Whole Foods Market!
