I know many of you have been vegan for years and make everything from scratch, but if you’re just starting out, or need something quick, check out Gardein products!
Tonight I made Vegan Chick’n Scallopini for two and it was SO YUMMY! I cooked up two fillets in a little bit of olive oil along with sautéed purple & spring onions, heirloom tomatoes & ground pepper.
Then I served it with beautiful organic red swiss chard, brown rice, cut corn & a dollop of sweet jalapeno sauce on the side.
Once again, here’s the key!
1) Was the meal colorful with all the necessary protein, carbs & fats? Yes! Corn & Rice = Carbs! Olive Oil = Fat! and 1 Chick’n Scallopini = 14 grams of protein! Awesome! And just fyi, swiss chard is really high in Vitamins K, A & C! Cooking with kale is my favorite, but chard is a very close 2nd!
2) Was the meal quick, easy & yummy enough so you’ll be inclined to be vegan for ever and ever? Yes! It takes less than 10 minutes and was ever SO tasty!
3) Was the meal cheap? Yes! Less than 2 bucks! If you buy Gardein’s Chick’n Scallopini on sale like I did at $3.50 per 4 pack, one fillet is only 89 cents! (and only 90 calories, for all of you calorie counters out there!)
