When I taught High School Health, I would always tell my students to look at their plates before they ate and to make sure it was bright and colorful. If it’s just filled with heaps of brown & white, then it’s probably lacking lots of super important vitamins and minerals. Make it vibrant! Not only is it healthier that way, it’s also really beautiful to look at!
My Sunshine Salad only took about 15 minutes to make. Here’s what I put in it:
Dinosaur Kale (no surprise there, right?! My favorite!)
Raw Beet (sliced into small sticks)
Red Bell Peppers
Orange Bell Peppers
I used as many organic ingredients as I could find, and for the beans, I used an inexpensive can of Ralph’s Organic Tri~Bean Blend. What’s awesome is now even major supermarkets are clearly marking products which are vegan! Must be the increasing demand for vegan food! Eating animal products is definitely on the decline. Hurray!
Just get creative, layer & shape into a pretty pattern, and… voila! One super happy looking Sunshine Salad!
Add whatever vegan dressing you prefer… there are lots to choose from! Or make your own. Here’s the recipe for the dressing I made: Jackie’s Vegan Dressing. It’s REALLY good, and if you’re refraining from oil, just leave it out. I’ve done that before, and it was still yummy.
