Here are 5 things that made me happy this week!

1) I’m really happy about how my “Galaxy Nutritional Foods” grilled cheese sandwiches turned out! Galaxy was kind enough to send me samples of their new vegan cheese shreds to try out and they were really good!

I coated my foreman grill with a little bit of organic olive oil and heated up some organic bread to get it hot and a few criss~cross marks, then I added some of the “Mexican Style Cheese Shreds,” sliced organic tomatoes, onions and grilled the sandwich for a bout 5 minutes, then popped it in the oven for another 5 minutes just to make sure everything was a big, yummy, hot & gooey mess. Just the way I like it! Here’s a sliced view and a side view… Mmmm!

But don’t pour a big bowl of the shreds and eat them raw expecting them to taste like dairy cheese. They don’t. But they ARE good for cookin’! Btw, the Vegan Zombie has a great video showing how he makes his grilled cheese!

Galaxy Nutritional Foods “Cheese” shreds seem good for those with allergies (no soy & no gluten) & there’s no palm oil (which helps save orangoutangs!) & no GMOs (take that Monsanto!). Delicious!

2) Happy to hear California legislative leaders said they won’t help a group of chefs who want to overturn an impending foie gras ban. No lawmaker has offered to take up their cause! Hurray!

Foie gras is created by the funnel-forced ingestion of large amounts of feed into the duck’s esophagus. Eventually the liver grows to more than 10 times its normal size. The ban takes effect in CA July 1st!

I’m hoping foie gras bans will will spread across the country and the world!

3) Happy with my dinner! I felt like eating something light & simple during the week, so I made some organic basil pasta that I found at Target! (I love that they sell organic food now!)

Added some chopped organic tomatoes on top with fresh basil leaves & spices… then drizzled with a bit of olive oil & a tiny bit of “Braggs.” Yummy!

4) Vegan IS Love!!


Tonight I bought my godson the book “Vegan is Love” by Ruby Roth! He’s only 7 years old, but made a decision a couple weeks ago to go vegan. He called me up from Memphis and told me “I just don’t understand why people eat animals. It’s one life for one meal.” Yep! He’s one smart cookie! And how awesome is it that Ruby Roth is getting SO much well deserved media attention for her book?! And when I bought mine on Amazon, they said “only 6 left in stock!” They’re selling like vegan hotcakes! Hurray!!

5) Lastly, I made a vegan someecard this week and it already has several hundred “likes” and “shares” on facebook! Isn’t it cute? Lots of pinterest “pins” too! Whoohoo! And I’m not surprised! It’s been a bad few months for the meat industry! Ground-beef sales, including trimmings, fell 11 percent to 37.7 million pounds in March, the smallest amount sold for that month in 10 years! And I bet sales will continue to decline…

People are fed UP with being sick from eating dead animals and they’re starting to realize vegan food is SO much tastier than any chunk of dead carcass.

And thanks to social media venues, it’s becoming increasingly difficult to keep people in the dark. They may not have windows in slaughterhouses, but we’re shedding lots of light out here! Education = Change!
